MAPLE PECAN PIE

1 (9-inch) unbaked pastry pie shell
3 eggs, beaten
1 cup maple syrup (pure is best)
1/2 cup firmly packed brown sugar
2 tbsp butter, melted
1 tsp vanilla extract
1 1/4 cups pecan halves or pieces

Place oven rack in lowest position; preheat oven to 350 degrees.

In a medium mixing bowl combine all ingredients except pastry shell.  Pour the filling into the unbaked shell.

Bake 35 to 40 minutes or until golden brown.

Remove from oven and cool on a wire rack.

Serve topped with whipped cream, if desired.


Leftovers should be refrigerated.
