I have gotten some of my best recipes out of novels I have read. This is another one of them. This one is from an Amish mystery from a Guidepost collection.
1/4 cup unsalted butter, softened
1/2 cup sugar
1 large egg
1 cup sour cream
1 1/2 tsp almond or vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 can (8-oz) crushed pineapple, drained
1/2 cup sweetened shredded coconut
1/3 cup chopped pecan pieces
In a large bowl, cream butter and sugar until light and fluffy. Beat together with the sour cream, egg, and extract.
Combine baking powder, baking soda, salt and flour. Stir into the creamed mixture only until moistened. Fold in the pineapple, coconut and pecan pieces.
Line 12 muffin cups with paper liners and fill each 2/3s full of the batter. Bake at 375 degrees for 23 minutes or until a wooden toothpick comes out clean. Cool in pan for 3 minutes before removing to a wire rack.
