3/4 cup sugar
1/2 cup baking mix (ie Bisquick)
1 can (16-oz) pumpkin puree
2 tbsp butter
1 can (13-oz) evaporated milk
2 tsp vanilla
2 eggs
2 1/2 tsp pumpkin pie spice
Grease a pie pan and turn oven to 350 degrees.
Mix all ingredients together with a beater until well combined, about 2 minutes.
Pour mixture into the prepared pie pan.
Bake at 350 degrees 50-55 minutes until a knife inserted in center comes out clean.
Pie makes it's own crust.
