CHOCOLATE SAUERKRAUT CAKE

2/3 c. butter

1 1/2 c. sugar

3 eggs

1 tsp vanilla

1/2 c. cocoa

2 1/4 c. flour 

1 tsp baking powder

1 tsp soda

2/3 c. chopped sauerkraut, rinsed and drained

Melt butter and mix with the sugar and eggs, mixing well. Add the remaining ingredients, except kraut, mixing well. Fold in the kraut. Bake in a greased 13 x 9 x 2-inch pan at 350 degrees for 30 minutes.

Icing:

1 stick butter

4 tsp cocoa

6 tsp milk

1 tsp vanilla

1 lb powdered sugar

Place in a saucepan and bring to a boil over medium heat. Stir to blend and prevent burning. Bring to a boil. Remove from the heat and pour over the cake.

This is an old recipe from one of my late mother's collections of church cookbooks.
