1 can (20-oz) unsweetened pineapple chunks
3 tbsp sugar
6 tbsp melted butter
3 tbsp white whole wheat flour
5- oz shredded cheddar cheese
1 cup butter cracker crumbs
Drain pineapple, reserving 3 tablespoons of the juice. Combine the pineapple, reserved juice, sugar, butter, flour and cheese in a bowl: mix well. Spoon into a very lightly sprayed casserole dish and top with the cracker crumbs.
Bake at 350 degrees for 30 minutes or until bubbly.
Yield: 6 servings
