When baking gluten-free breads the following is recommended:
- Use plain light-colored metal pans
- Choose pans that are plain with flat sides and bottoms/2
- No decorative patterns
- Use 4 1/2 x 8 1/2-inch pans as gluten-free breads rise better in narrower pans
- Shiny or light-colored pans produce breads with a lighter cru
