PANS FOR BAKING GLUTEN-FREE BREADS

When baking gluten-free breads the following is recommended:

  • Use plain light-colored metal pans
  • Choose pans that are plain with flat sides and bottoms/2
  • No decorative patterns
  • Use 4 1/2 x 8 1/2-inch pans as gluten-free breads rise better in narrower pans
  • Shiny or light-colored pans produce breads with a lighter cru
