RED VELVET BERRY CUPCAKES

1 pkg (2-layer size) red velvet cake mix

3 eggs

1/2 cup oil

1 1/2 cups butter, room temperature

6-oz cream cheese, room temperature

3 cups powdered sugar

1/2 cup water

1/2 cup milk

1 1/2 cup mixed berries of your choice, washed and dried

Preheat oven to 350 degrees.

Line 24 muffin cups with paper liners and set aside.

Prepare the cake mix according to the package directions with the eggs, oil, 1/2 cup water and 1/2 cup milk. Divide the mixture evenly into the lined muffin tins. Bake 18 to 20 minutes and cool completely on a wire rack.

To prepare the frosting, beat the butter and cream cheese until smooth. Beat in the powdered sugar then beat on medium-high 2 minutes. Pipe or spread on cooled cupcakes then top with the berries.

Yield: 24 cupcakes
