I got this recipe from Baker's Coconut probably forty years ago. It has always been a favorite everywhere I have taken it. And it is so easy to make!
2 cups milk
3/4 cup sugar
1/2 cup biscuit mix (such as Bisquick)
4 eggs
1/4 cup butter or margarine
1 1/2 tsp vanilla extract
Put all the above ingredients in a blender container and blend on low speed 3 minutes.
Pour into a greased deep dish 9-inch pie pan and let stand 5 minutes. Sprinkle 1 cup shredded coconut overall.
Bake at 350 degrees for 40 minutes.
This pie will make its own crust as it bakes.
