GLAZED ALMOND COOKIES

1 cup butter, softened

1 cup sugar

2 eggs, separated

1/2 tsp almond extract

1/2 tsp vanilla extract

2 2/3 cups sifted cake flour

1/2 tsp salt

3/4 cup chopped blanched almonds

4 dozen whole almonds

Cream butter, gradually adding sugar, beating until light and fluffy. Add the egg yolks, vanilla and almond flavorings. Beat well. 

Combine the flour, salt, and chopped almonds. Add flour mixture to sugar mixture, stirring well until blended.

Shape dough into 1-inch balls and place 2-inches apart on parchment lined cookie sheets. Place one whole almond in the center of each cookie, flatten slightly.

Beat egg whites slightly and brush over cookies.

Bake at 350 degrees for 13 minutes or until lightly browned.

Yield: 4 dozen cookies
