Crust:
4 egg whites, save yolks for filling
1 tsp vinegar
1 tsp vanilla
3/4 cup sugar
1/8 tsp salt
Beat egg whites until foamy. Add the vinegar, vanilla and salt. Beat until stiff and dry. Add the sugar, 1 tablespoonful at a time and beat until dissolved. Grease a pie pan and spread meringue on bottom and sides to form a crust. Bake at 275 degrees for 1 hour. Allow to cool in the oven. Do not remove until completely cool.
Filling:
3 tbsp flour
3/4 cup sugar
4 egg yolks
1/2 cup water
1/4 cup lemon juice
1/8 tsp salt
Mix together in the top of a double boiler and cook until thick. Add a few drops of yellow food coloring. Cool. Add 2 cups Cool Whip and blend well. Fill the meringue crust. Top with Cool Whip. Cover and refrigerate.
